Advent Day 18 - Christmas Star biscuits and star carol

Makes approx 8 large and 20 small biscuits

110g (4oz) butter   
275g (10oz) plain flour
110g (4oz) brown sugar
1 tsp baking powder
75g (3oz) golden syrup
2 tsp ground ginger
1 medium egg
1 tsp cinnamon
110g (4oz) sifted icing sugar
1 tblsp water

 

Cream butter and sugar together in a bowl using a wooden spoon.
Add the golden syrup and the egg and mix until smooth.
Sift the flour, baking powder and spices and fold into the mixture to form a stiff dough.
Shape dough into a ball and leave in a cool place or the fridge for at least 1 hour.

 

Preheat oven to 180C/350F/Gas mark 4
Turn dough on to a floured surface and roll out to 3mm thick.
Use cutter to cut out star shapes and make a hole in the top of some of the cookies so you can hang them on the tree.

Place on greased baking tray and put in preheated oven to bake for 10 - 15 mins.  Leave to cool on a wire tray.

To make the icing
Gradually stir water into the icing sugar until smooth and firm.  If you want coloured icing add a few drops of food colour.

Thread ribbon through to hang on the tree or wrap up and give as special presents.
